Windward Gaia Grilled Flank Steak

GAIA GRILLED FLANK STEAK

Summer is in full force which calls for a trip out to the grill. Our newest recipe takes everything you love about our Gaia beef jerky - the peppery garlicky goodness - and transforms it into the perfect grilled Summer dinner. 

Ingredients: 

  • 2 lbs flank steak
  • 4 large cloves garlic
  • 2 tbsp Herbs de Provence (or Italian herb blend of your choice)
  • ½ tbsp smoked paprika
  • ½ cup extra virgin olive oil
  • Kosher salt
  • Cracked black pepper

Process:

In a mortar and pestle, combine the garlic, paprika, herb de provence, and a small pinch of kosher salt. Using the pestle, grind all ingredients into a thick paste. Once ingredients are ground add the extra virgin olive oil and mix thoroughly until well incorporated. Set aside.

*Note: If you do not have a mortar and pestle, then you can either chop the garlic very finely, use a garlic crusher, or grate the garlic in a bowl. Then add other ingredients and mix well.

Add your flank steak to a shallow baking dish and season both sides well with kosher salt. Once seasoned, add your marinade and massage into both sides of the meat (this can be done using a large plastic bag as well). Let marinade anywhere from 1-8 hours in the refrigerator.

After meat has marinated the desired time, remove from the fridge and set aside to bring back to room temperature. Before heading to the grill, season both sides generously with freshly ground black pepper.

Grill the flank steak 4-6 minutes per side, or until desired doneness. Let rest for 5-10 minutes and enjoy.

While we used flank steak for the recipe, this adapted Gaia marinade would be great on any type of steak!
